Delicious Gluten-Free Pasta with Mushrooms

Ingredients

  • 3 cups of Hearts of Palm Spaghetti

  • ½ cup of porcini, dry (or other mushrooms)

  • 2 cups of warm water (to rehydrate porcini)

  • 1 diced onion

  • 2 tbsp. of olive oil

  • 1 tbsp. of corn starch

  • Salt and pepper

Directions

  • Wash and drain Hearts of Palm Spaghetti.
  • Put porcini in warm water, let rest for 25 min until tender.
  • Sauté onions with olive oil.
  • Add mushrooms.
  • Cook for 10 min using medium heat.
  • Add corn starch.
  • Remove from heat and blend 80% of the mixture.
  • Set aside rest for later.
  • Put blended mixture back in sauté saucepan.
  • Toss in Spaghetti and heat for 2 min.
  • Plate Spaghetti and use remaining mushrooms as a garnish.
