Delicious Gluten-Free Pasta with Mushrooms
Ingredients
3 cups of Hearts of Palm Spaghetti
½ cup of porcini, dry (or other mushrooms)
2 cups of warm water (to rehydrate porcini)
1 diced onion
2 tbsp. of olive oil
1 tbsp. of corn starch
Salt and pepper
Directions
- Wash and drain Hearts of Palm Spaghetti.
- Put porcini in warm water, let rest for 25 min until tender.
- Sauté onions with olive oil.
- Add mushrooms.
- Cook for 10 min using medium heat.
- Add corn starch.
- Remove from heat and blend 80% of the mixture.
- Set aside rest for later.
- Put blended mixture back in sauté saucepan.
- Toss in Spaghetti and heat for 2 min.
- Plate Spaghetti and use remaining mushrooms as a garnish.
