Low Carb Pasta Scampi with Hearts of Palm Noodles

Ingredients

  • 3 boxes of Hearts of Palm Spaghetti Pasta

  • 2 cups heavy cream and 1 cup separated

  • 1 pound butter

  • 1 cup dry white wine

  • 2 tablespoons capers

  • 2 tablespoons garlic powder

  • 1 tablespoon black pepper

  • 1 tablespoon pink Himalayan salt

  • 1 bag frozen bell pepper and onion medley

  • SEAFOOD
  • 1 pound mixed seafood medley frozen

  • 1 pound frozen langostino

  • 4 oz of mushrooms (your choice or omit)

  • 3 tablespoons cajun seasoning

  • 1 tablespoon salt

  • Juice of 1 lemon

Directions

  • Soak 3 packages of spaghetti in the 1 cup of heavy cream for 1 hour before use.(this is separate from the 2 cups!)
  • Melt butter in large sauté pan on medium heat.
  • Add in frozen veggies and all seasonings, wine, and capers.
  • Reduce heat to low..
  • Add in pasta with heavy cream.
  • Cook on low for 30 minutes for flavors to infuse.
  • SEAFOOD
  • Mix all ingredients in a bowl.
  • Bake for 30 mins at 375 on a greased sheet pan.
  • Serve on top of pasta and enjoy!
