Plant Protein with Low Carb Noodle Salad

Ingredients

  • 2 cups shredded romaine lettuce

  • Veggie Pasta Noodles (1/2 pkg)

  • Homemade beef/ pork meatballs

  • Sliced green onions

  • Sliced red chile peppers

  • Lime wedges

  • Finely chopped cilantro and basil

  • Gluten-free soy sauce

  • Quick pickled veggies
  • 1/2 cup each thin matchsticks of carrots and cukes

  • 1/2 cup rice wine vinegar

  • 1 Tbsp Swerve sweetener @swervesweetie

Directions

  • Make the veggie noodles according to directions.
  • Place shredded lettuce in a bowl.
  • Add meatballs, noodles and pickled veggies.
  • Sprinkle green onions, basil, and cilantro over everything.
  • Spoon some of the pickled juice over everything plus a bit of soy sauce.
  • Add a few slices of chile pepper and a lime wedge to bowl.
